生物活性：Transglutaminase (EC 2.3.2.13) 是一种在蛋白质分子之间形成交联的酶。Transglutaminase 催化谷氨酰胺残基的 γ-羧酰胺基团与不同化合物的一级 ε-胺基团之间形成异肽键。Transglutaminase 参与许多生理过程，包括凝血、抗菌免疫反应和光合作用。
体外：Transglutaminase activity can be increased by Co2+, Ba2+ and K+[1]. Microbial transglutaminases are inhibited by Zn2+, Cu2+, Hg2+ and Pb2+ ions which bind to the thiol group of cysteine in the active centre[1]. MCE has not independently confirmed the accuracy of these methods. They are for reference only.
